Easter Cake 100% Natural

Treat your family and friends to this delicious 100% natural Easter cake.

Ingredients

  • 150g of butter
  • 150g of coconut sugar
  • 200g of almond flour
  • 50g of dried coconut milk
  • 50g of cacao powder
  • 1 teaspoon of baking powder
  • 50g of almonds
  • 3 x eggs
Filing and frosting
  • 15g of bone broth hot chocolate
  • 250ml of double cream
  • 3 x strawberrries sliced
  • 8 x blueberries
  • Dark chocolate chips (optional)

Instructions

  1. In a saucepan heat the butter and coconut sugar, stir well. Remove from the heat once melted.

  2. Add all the dried ingredients together (almond flour, cocoa powder, coconut powder and baking powder), exclude the almonds.

  3. Add the butter and sugar together add the dried ingredients.
  4. Then beat the 3 eggs, add to the mixture

  5. Mix all together well. Then add the almonds.
  6. Butter the cake baking trays to avoid the cake from sticking. Then add all the mixture into both the trays.
  7. Pat on the top with water on the back of your fingers.
  8. Pop into the oven and bake for 20 minutes.
Once baked, allow the cake to cool.
Frosting and filing
  1. Once cooled, whip up the double cream with the bone broth hot chocolate.
  2. On one side of the cake spread out half the cream mix, then add the sliced strawberry and blueberries.
  3. Put the other cake on top and spread the whipped cream over the top of the cake. Add the dark chocolate chips to decorate.
Serve and enjoy (advisable to eat in 2 days and keep in the fridge)
